    Observation: The door gaskets on True freezer and True 2 door refrigerator are torn/damaged.
    Correction: Repair or replace the True freezer and True 2 door refrigerator door gaskets in accordance with the manufacturer's specifications.

Once manager certificates are received, certificates need to be transferred over to Norfolk food manager certificates. There is a $10 transfer fee. Order in for gasket repair on refrigerator. Food permit, copy of receipt and application issued to kitchen manager.

Spoke with kitchen manager about separating fire extinguishers from other items on shelf. Informed by kitchen manager that hood cleaning service to mail sticker to post on hood. Copy of food temperature, dishwasher temp chart, food handler training information, food manager class schedule and minimum internal cooking temp sheet given to kitchen manager.

    Observation: Walk-in freezer door seal in disrepair. Observed some ice around seal of door. Spray nozzle at compartment sink in need of repair. Hot water nozzle at hand sink located on left side of bar is not working.
    Correction: Repair the door seal around walk-in freezer, spray nozzle at compartment sink and hot water nozzle at hand sink at bar to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the walk-in freezer door seal, spray nozzle at compartment sink and hot water nozzle at hand sink at bar, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Food permit, copy of application and receipt given to manager. Informed manager to post original food permit where it is visible.

Spoke with certified food manager concerning transferring Serv Safe certificate over to a Norfolk certified food manager certificate. Spoke with cfm concerning grease trap and FOG program. Hood system will be due for cleaning in September. Informed manager to have servicer post correct recleaning date once serviced. Door gaskets ordered for replacement on True 2 door fridge. Spoke with cfm concerning the use of ice bends at bar, labeling of contents in spray bottles, proper storage of personal items, kitchen floor, and having staff recheck refrigeration for thermometers in all units.

Spoke with owner concerning the posting of certified food manager certificate. Spoke with owner concerning hood system, walk-in keg cooler, walk-in freezer and newly hired employee. Copy of food handler class schedule given to owner. Refrigeration and product checked are holding at proper temperatures. Facility is recommended for permit. Once application and permit fee is received and processed, Health permit will be issued.
No violation noted during this evaluation.
