Excellent date marking system. Employees were observed wearing and changing gloves and washing their hands when necessary. Discussion about new food code, storage of ice bucket, and employee health policy. Provided 3-C setup and handwashing signage, Refrigeration log for the pizza prep unit (adjusted lower during inspection), cooling log, duties of the person in charge requirements, ServSafe training options, and OEHS Guide to Employee Health. Possibly add paper towel holder to facilitate easier handwashing at the bar and pizza prep handsinks. Cutting boards are heavily scored and need to be repaired or replaced (last inspection in July identified this as a violation). Due to small Walk In Refrigerator staff to work on system to separate raw and ready to eat foods. Keep up the great work! Themomter calibration checked during inspection and was accurate.

A pre opening inspection was conducted at the owners request. The food preparation area has glass board walls and ceiling that are easily cleanable. There are two hand sinks in the food preparation area and two behind the bar/lounge area. The are two walk-in refrigeration units one for food and another for beverages. There are two refrigerated preparation units in the food service area and a vegetable prep sink. There is a 3 compartment sink and low temperature dishwasher in the food preparation area. A floor mixer will be installed in the food preparation area and will be sealed to the floor.The firm is still in the process of putting in equipment and should make sure it is sealed to the wall where needed. There was one section of wall in the women's rest room that was raw wood and will be sealed. All exterior doors will be tight fitting to prevent an entrance for rodents and insects. Proper lighting has been installed in the food preparation areas including an overhead light in the walk-in cooler and covers an/or shatterproof bulbs on the lights.
