Person in charge knowledgeable about food safety and answered questions correctly regarding cook temperatures, cold holding, cooling, and employee health. A new date marking system is going to be worked on to simplify process. Discussion of storage of the raw products (eggs and burger) on the bottom of fridge units, increased ice for ice bath area, and self closures on doors. Shared dumpster area with another establishment is going to be discussed between management of both places. Employees properly washing hands before donning gloves. Also, dishmachine and sanitizer buckets properly sanitizing items at 100ppm for chlorine and 200ppm for quat.
