Floor drain from dishwasher was clogged. County workers were there during my inspection. Disposable plates and utensils being used today. Workers got the drain working again before I completed my inspection.

Required temp. logs being maintained. Good hand washing observed. All staff appear healthy, facility in good shape. No hazards noted. The Hobart Ware washing machine has a leak and is not in service- work order issued on it. Using disposables and three compartment sink for utensils, etc.

Well trained staff in facility. Excellent personal hygiene and proper glove, utensil use observed. Good record keeping and food handling procedures noted.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The milk refr. was observed in a state of disrepair. The unit is not holding the product at or below 41DEG.F.
    Correction: Repair the milk refr. to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the milk refr., replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. The milk is currently on time control being swapped-out with milk from the walk-in refr. This is the SECOND REPEAT VIOLATION FOR THIS REFRIGERATION UNIT. Have the unit functioning satisfactorily or replaced PRIOR TO THE SCHEDULED FOLLOW-UP INSPECTION.

Previous hazard corrected. Milk refrigerator now functioning satisfactorily, has been repaired, had fan out in one side. Required cooking/heating logs maintained and up to date. Cold holding unit logs maintained as well, no hazards noted today, good job.

Good personal hygiene with no bare hand contact with foods observed. Milk is on time control in milk refr., continue this practice with proper documentation until unit is repaired to function properly or replaced. Required time/temperature logs maintained on foods and equipment. Good job today.

    Observation: The milk refr. on the service line was observed in a state of disrepair. Unit not holding milk at required temperature of 41Deg.F. or lower.
    Correction: Repair the milk refr. to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the milk refr., replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Currently milk is on time control alternating milk between walk-in refr. and milk refr.

Discussed menu items. Only ground beef and oven ready turkey are received raw. Discussed prep with these. Beef is cooked the same day it is served. Turkey is cooked, cooled, and reheated the next day.
Reviewed logs and appropriate temperatures were reached when this was done. Very little food is ever saved from one day to the next, but they always follow their cooling procedure when they do.
Discussed employee health and the restrictions due to the pre-k class. All employees have signed the safe working statement.
Discussed use of single use trays and utensils when there is a large amount of illness in the children. This is a good idea and could help. The most important is that you use a disinfectant level of bleach water(1/10) on any surfaces possibly contaminated by someone that is sick.

All foods reheated to 180°F and above. This is the temperature noted in the HACCP logs, but you should put the actual temperature of the food, otherwise it looks like you are just writing 180 every day.
Excellent monitoring of temperatures. Good handwashing and prevention of barehand contact. Remember gloves are to protect the food and we need to protect the gloves from possible contamination, including touching clothing.
Person in charge has the risk controlled with both the milk cooler not functioning and the dishwashing machine not functioning. Great job controlling the risk, but these items need to be repaired as soon as possible.
Person in charge noted that the third compartment did not have sanitizer and corrected without prompting from the health inspector.

  • Equipment - Good Repair and Proper Adjustment
    Observation: Milk cooler is missing its door gaskets and cannot hold proper temperature. Person in charge is rotating milk from the walk-in and is controling the risk. Also the dishwasher is down, but the part should be in this week to fix it.
    Correction: Replace the gaskets and make sure the milk cooler is functioning properly. Continue to rotate milk from the walk-in and make sure the milk is at the correct temperature.

Good handwashing and prevention of barehand contact observed.
Remember gloves are to protect food and must be changed if they become contaiminated in any way.
When working in the dish room, you must wash hands at the hand sink when going from handling dirty trays to handling clean trays.
Overall facility is in good shape.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F.

    Observation: Raw foods of animal origin (ground beef) stored over ready-to-eat (RTE) food (lettuce) in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. Ground beef moved to bottom shelf.
  • Equipment and Utensils - Multiuse, Characteristics
    Observation: The food contact surface of the tan metal push cart is no longer easily cleanable as it is rusting.
    Correction: Repair or replace the metal push cart to permit easy cleaning and prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the yellow double door hot cabinet.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
