Proper washing, rinsing and sanitizing observed in the three compartment sink. Traulsen freezer is still not in use, work order has been sent, parts on order, unit is clean. No hazards noted today. Discussed date marking. Excellent marking of ready to eat food items under refrigeration with the date opened/repaired. Remember the day opened/prepared counts as day one so items opened/prepared today the 15th must be used by the 21st. Discussed cleaning/sanitizing and the importance of the distinct clean water rinse between them. Discussed employee health. The Traulsen unit has not been working for some time. It must be repaired or replaced before January 2015.

Good prevention of barehand contact and handwashing observed. Remember hands must be washed when changing tasks such as working with dirty utensils/trays and then working with clean utensils and trays. Good cooling of the spaghetti sauce using ice/water bath. Discussed the way the sweet potatoes were set up in the one Traulsen stacked and on the bottom. They had them off set from one another allowing some air flow. With the one unit down and no speed racks for the walk-in, cooling multiple items is very difficult. The refrigerator must be fixed as soon as possible and must be fixed before school starts again in August.
