Facility needs work in dishwashing room as noted, otherwise, food operation very well run, good record keeping and propcedures followed.
  • Physical Facilities in Good Repair
    Observation: The ceiling in the dishwashing room is not maintained in good repair. it is peeling and sagging down at front right corner.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair the ceiling in the dishwasher room.

Facility well maintained. Required food prep./cooking/heating logs maintained. All cold and hot units have time/temp. logs as well. Proper washing, rinsing and sanitizing observed in the three compartment sink. Traulsen freezer is still not in use, work order has been sent, parts on order, unit is clean. No hazards noted today.

Discussed date marking. Excellent marking of ready to eat food items under refrigeration with the date opened/repaired. Remember the day opened/prepared counts as day one so items opened/prepared today the 15th must be used by the 21st.
Discussed cleaning/sanitizing and the importance of the distinct clean water rinse between them.
Discussed employee health.
The Traulsen unit has not been working for some time. It must be repaired or replaced before January 2015.
  • Cooling, Heating, and Holding Capacities (repeated violation)
    Observation: Traulsen refrigerator is still non-functioning as observed in the last few inspections.
    Correction: Repair or replace the unit, to improve cold holding capacity to properly meet the demand of the facility.
  • Rinsing Procedures (corrected on site)
    Observation: The wash solution and the sanitizer solution were prepared in the first two sinks. Soap suds present in the sanitizer solution.
    Correction: Prepare the wash solution in the first sink and the sanitizer solution in the third sink to allow rinsing in the second sink to prevent soap suds from entering the sanitizer solution.

Good prevention of barehand contact and handwashing observed. Remember hands must be washed when changing tasks such as working with dirty utensils/trays and then working with clean utensils and trays.
Good cooling of the spaghetti sauce using ice/water bath. Discussed the way the sweet potatoes were set up in the one Traulsen stacked and on the bottom. They had them off set from one another allowing some air flow.
With the one unit down and no speed racks for the walk-in, cooling multiple items is very difficult. The refrigerator must be fixed as soon as possible and must be fixed before school starts again in August.
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands after handling dirty trays and before handling clean trays.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Cooling, Heating, and Holding Capacities
    Observation: Traulsen refrigerator near the break room is not working and this is making it hard to cool food properly with the amount of food being prepared and cooled.
    Correction: Repair or replace the Traulsen refrigerator. Acquire speed racks that can be rolled into the walk-in refrigerator for cooling of food.

    Observation: Trash and litter were observed adjacent to the refuse containers in the outside refuse container enclosure area.
    Correction: The refuse container storage area and grounds adjacent to the containers are to be maintained clean and sanitary.
