    Observation: The card table holding the ice machine is not designed and constructed to be durable.
    Correction: Remove this item from the facility and replace with an approved unit as needed. Equipment must be capable of maintaining their original characteristics in order to be easily cleaned.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the inside of the freezer and the fan grills inside the Continental Refrigerator has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Floors and wall behind the grill and equipment noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermometer read 129ºF.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
  • Light Bulbs Protective Shielding
    Observation: Light bulbs in above the grill not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

The dish machine at this facility continues to be an issue. If management decides to continue working on this unit, I need to be notified when the technician will be here and meet with them to explain why the machine continues to fail, how it functions (different from all other with dispensing chemical). For now, all dishes need run through the 3 vat sink( wash, rinse, and sanitize).
  • Equipment - Good Repair and Proper Adjustment
    Observation: The Kenmore small refrigerator unit observed not cold holding food at 41 or lower.
    Correction: Repair the Kenmore refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the Kenmore refrigerator, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications.
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
  • Hand Drying Provision (corrected on site)
    Observation: No continuous towel system that supplies the user with a clean towel has been provided.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
