Person in charge (PIC) did not know when they were opened. COS- discarded. KDA_3_20215 - --Located in the retail area, there was a can of Campbell's cream of mushroom soup with a class 2 can defect. COS- removed from retail area. KDA_3_30211A1b - --Located in the walk in cooler (WIC), there were cartons of raw shell eggs stored above a container full of canned soda. COS- moved soda. KDA_3_30511A1 - --Located walk in freezer, there was a box of flatbread and a box of cheesy breadsticks stored on the floor. KDA_3_50116A1 - --Located in the Hatco pizza warmer, there were slices of pepperoni, cheese, beef, and sausage pizza at temperatures between 129F and 132F. COS- discarded, remade pizzas, and turned the warmer's temperature up. Located in the Hatco sandwich and fried food warmer, there were two baskets of chicken tenders at 126F. PIC indicated that they had been in the warmer for 30 minutes. COS- microwaved, reheated to 170F, and turned up temperature in the warmer. KDA_3_50116A2 - --Located in the retail area sandwich RIC, there was a turkey pinwheel wrap at 45F, an Italian pinwheel wrap at 44F, two egg salad sandwiches at 46F and 48F, two chicken salad sandwich at 45F, three ham pinwheel wraps at 44F, 45F, and 46F, a tuna salad sandwich at 45F, an Italian sub at 48F, four chicken tender wraps at 45F, four ham subs at 47F, four club subs at 46F, and two turkey cheese subs at 45F. All of these food items were placed in the RIC last night. Ambient temperature of the unit was 41.6F. COS- discarded all food items, turned down unit temperature. Employee indicated that they had been stocked on 9/19. COS- dated. KDA_3_50118A3 - --Located on the MT, there were containers of pizza sauce, pepperoni, sausage crumbles, and beef crumbles with dates marked as 9/20 through 9/27. COS- redated for 9/20 through 9/26. Located in the RIC under the kitchen MT, there was a container of sliced roast beef and a container of pepperoni dated from 9/18 through 9/25. COS- redated for 9/18 through 9/24. KDA_4_60111A - --Located on a shelf over the make table (MT), there was a plastic food container stored as clean with a sticker on it. COS- moved to wash area. Located in a drawer in the back of the kitchen, there was a knife that was soiled with dried food debris. COS- moved to wash area. KDA_4_60111C - --The fan guards in the WIC were covered with an accumulation of dust. There is an accumulation of cappuccino powder on the inside of the cappuccino machine. KDA_4_60211E4 - --There is mold on the inside of the ice chute and under the soda nozzles of the soda fountain in the retail area. KDA_5_501113 - --The lid to the outside dumpster was opened. KDA_6_30111 - --There was no soap available at the kitchen hand sink. Corrected on site (COS)- provided soap.
