PHF/TCS foods receiving temperatures Observation:Pasta Salad transported from Asbury Road location under no thermal control while in transportation and measured 50.6 degrees. Cut lettuce salads were at 50 degrees as well. Maintain product temperature at 41 degrees while in transportation by the use of thermal controlled totes or coolers. Cut tomatoes in tote measured 57 degrees (no ice).
