Food temperature measuring devices are provided and readily accessible Provide and monitor thermometers for memory care refrigerator and refrigerator for Bridges dinig area. Provide a thin cooking thermometer designed to check thin foods. Staff using a bi-metallic thrmometer at inspection to verify cook temperature of thin chicken breasts by stacking.
Miscellaneous sources of contamination Placement of beverages in memory care freezer containing a straw which has been drank out of.
Roasts held at a temperature of 130°F or above Frigidaire refrigerator in memory care unit is running warm. macaroni salad measured 52.3, milk measured 52.7. Frigidaire refrigerator in Bridges dining service area was running warm milk measured 45 degrees, and cream cheese measured 51.3 degrees. Maximum allowable temperature is 41 degrees. All tcs/phf products were discarded at inspection. Corrected at time of inspection. Units may not be used for perishable products until they maintain 41 degrees or less.
