- Observed employee improperly washing their hands. He touched the handle of the faucet with his hands, instead of using a paper towel. He also tended to pull his pants up quite frequently. The manager will conduct a hand washing training with all employees verifying they can properly wash their hands. I need this by 10-28-15.
- There are shelves that have paint coming off, especially the one by the stove. Also there are wood pieces and pieces of plastic up by the hood. I pointed this out to the manager.
- Wash, rinse and sanitize the following: trays with pitchers, cart, microwave.
- There is buildup on floors in the dish machine room especially under the 3-compartment sink.
- There is buildup on walls in the dish machine room especially by the 3-compartment sink and under the dish machine.

- Found 3 badly dented cans of food on shelves. They were removed. Make sure employees know to check for dents and what constitutes a badly dented can. You may need to put up a sign reminding employees to check for dents.
- Observed 2 employees not washing their hands correctly. They both touched the faucet with their hands to turn it off. The paper towel dispenser is currently broken and I think this is part of the reason. I also didn't see the employee in the dish machine room wash her hands when going from dirty dishes to clean dishes. I need all employees trained on hygiene and how to properly wash their hands. I gave a hand washing sign to the dietary assistant. I also want verification that all employees know how to properly wash their hands. Once you have trained employees and verified they can properly wash their hands email Katie.
- The paper towel dispenser is broken. In order to get a paper towel you have to walk over to a shelving unit to get one. I think this is part of the reason for the handwashing violation. Paper towels should be in a convenient location and easy for employees to get. Automatic paper towel dispensers are ideal. If you get a dispenser you have to push a button for make sure employees know to do that first.
- The trim by the dish machine is missing. There is glue left on the wall.
- There is black buildup on the wall behind the dish machine.
- No certified food manager was at the facility at the time of the inspection. Per dietary assistant she took a class online, but doesn't have her food manager's license. Explained you need to have someone here at all times with their food manager's license. I will email a copy of the schedule of classes at TCHD.

- Observed a box of plastic cutlery that were without a cover and did not have the handles going the same way. The paper towels weren't in their normal location so you have to go over the box of cutlery with wet hands to get to the paper towels.
- Found buildup on floors under the dishmachine.

- Observed quat sanitizer above 200 ppm. Ensure quat sanitizer is 200 ppm. Sanitizer dispenser was adjusted by manager at time of inspection.
- Found debris accumulation on cutting board holder and on knife in knife rack. Wash, rinse, and sanitize these surfaces and ensure routine cleaning.
- Found plastic cups stacked together wet. Ensure all dishes are air dried before stacking.
