JCDH 2.2 Provide food safety training for all food handlers as required. Fill in manager does not have a foodsafety training since he is from the St. Clair county store and an emp.loyee expired on 11/10/11. Informed fill in manager that if he was going to work in Jefferson County then he had to have food safety training even if it was only occasionally.
4-202.11 Provide smooth, easily cleanable food contact surfaces. Broken or cracked food containers and lids. Food containers and lids were discared prior to the end of the inspection.
3-501.13 Cease thawing potentially hazardous food at room temperature. Frozen chicken breast strips, roast beef, and meatballs left out at room store to thaw. Items were labelled with prep dates and stored inside of the RI cooler to thaw.
3-304.12 Store scoops left in potentially hazardous food with handles above the top of the food and the container. Scoops stored on make line inside of buffalo chicken breast strips and philly steak with handles touching food.
4-602.11 Clean fan covers on RI coolers and/or RI freezers. Accumulation of dust and grime on fan covers. 4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue. Accumulation of grime and residue on gaskets of RI coolers.
6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Accumulation of residue underneath shelving and equipment. 6-501.12 Clean ceiling and/or wall vent covers. Accumulation of dust, grime, and residue on ceiling vent covers.
