4-301.14 Provide ventilation hoods sufficient in number and capacity to prevent accumulation of grease or condensation on walls and ceiling. Main food prep area is extremely hot. Air is not circulating in kitchen area.

4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue. Ice maker has dirty build up on non food contact surfaces. Drain lines have dirty build up.

5-103.12 Provide hot and cold water under pressure at the ware washing sink. Hot water not working properly at ware washing sink. Facility has dish machine that is working properly and is using single service items. Repair person has been contacted to repair system.
5-205.15 Repair plumbing. Repair hot water system so that hot water works at all stations. Facility has several handwashing sinks that did not distribute hot water at the time of inspection. There is hot water available however not at all sinks.

Three compartment sink was filled with hot water from hot water distribution system for temporary usage temperature was 120F. This hot water distribution system is a permanent fixture in facility. Toilet room was supplied with hot water at handwashing sink.
