6-501.11 Repair or replace damaged area in the ceiling at the make line to provide a smooth cleanable surface.

6-501.11 Repair or replace damaged ceiling. Per Mr. Akers, the roof has been repaired where there is moisture damage. There is visible ceiling damage with exposed drywall in the dishroom, over the make table and in the dry storage room. / There was no visible moisture on or dripping from the areas during the inspection.
6-501.12 Clean ceiling and/or wall vent covers to remove excessive dust.
6-501.14 Clean ventilation hood system to eliminate excessive grease and dust buildup inside of the hood.

I advised Mr. Akers that a leaking roof over open food service in areas that can not be avoided can facilitate an imminent health hazard and is cause for closure. He assured me that the roof repairs have been made and the leaks have already been eliminated. The store manager will notify me when the ceiling repairs have been completed.
