Spoke with owner, Marta, regarding individual processing bread out of her facility. There is someone whom is processing bread at night at Martas Bakery. I instructed her to cease immediately, issued handwritten NOV and gave instruction for obtaining proper permit. /// cheesestraw verification: Martas has an employee that comes in one day a week to prepare the cheesestraws. The cheese straws are sold at Martas Bakery only. The product is exclusive for Martas Bakery.

4-101.11 Cease the use of food contact surfaces which alter color, odor, or taste of food, or which allow migration of substances. Take measures to replace pitted and scored cutting boards that have heavy black build up.
