4-502.11 Calibrate thermometers according to manufacturer specifications as often as necessary to ensure accuracy. Thermometer reading 27F in ice water.
3-301.11 Provide utensil with handle for serving or dispensing food or ice. Using a styrofoam cup to scoop sugar.
3-304.12 Provide a clean surface in a protected location for storing ice scoop; or store in ice with handle upright. Handles of the scoops are resting in the ice.
4-501.116 Provide test strips with color chart for chlorine sanitizer.
3-305.14 Provide chlorine solution at 50 to 100 ppm for storing cloths used to wipe counters and equipment. Lemon scented bleach is being used as the sanitizer. When using chlorine as the choice of sanitizer, only use regular bleach.
3-101.11 Provide safe, unadulterated, and honestly presented food. Raw shrimp thawing in handwashing sink. Discarded.
3-401.11 Cook poultry, wild game, and any stuffed product containing potentially hazardous food to at least 165 F for at least 15 seconds. Employee cooked raw chicken to 160F and served on plate. Discarded and recooked plate. Employee was unaware of cooking temperatures.
3-501.16 Maintain potentially hazardous food at 41 F or below. Turkey, feta cheese and other sandwich meat at 48F and above.
3-305.11 Store food at least 6 inches above the floor. Food stored on floor in walk in freezer and cooler.

7-209.11 Store personal care and other non toxic items away from food, utensils, equipment, linens and single service/single use articles. Personal care items stored next to food items. Personal items relocated to a self contained container and stored away from food.
Procedural changes have been made and implemented for cooking and cold holding. During this inspection food temperatures were within limits and employees were aware of proper temperatuers.
