Pounded it tender.
Egg washed it.
Put crumbs on it and then fried it.
This was done for years and originated from a German that knew how to cook schnitzel

My brother snorkeled to harvest legal abalone and mom prepared it just like Schnitzel…
It could be we just meet the nicest people when in Western WA…
