There is one in Phoenix called Beatitudes , with different levels of care and the rates ( just a few years ago 2018 ) it was very reasonable but since the great INFLATION GREED CRISIS it is probably more expensive

I hear you. Where we live in Wisconsin there are very few 55 older Independent Living Apartments. We want to stay here but most places are geared towards those that need help. Or they are restricted income.
We will probably end up in a regular apartment.
I could see myself in a studio apartment in town, with food delivered and some kind of Uber or taxi service available (and no car). It's the car dependence that has me worried. I think town will have Uber or such in time.
My town has a van for seniors. They pay around $75/year for it. I live in a 55+ ((or maybe it's 62?) apartment complex. The senior van comes here every day to pick people up or drop them off
We don't get meals but people who are done with cooking subscribe to one of those meals services. For people who still cook, they either get the food delivered from to the grocery store or they sign up for a free personal shopper.
These apartments have the necessities, such as washer and dryer in each apt, dishwasher, built in stair lift if you live on the second floor, central a/c.
I'll never be able to afford assisted living either and I was living in Ma$$ when I found this place by googling. I tried all sorts of searches like senior housing, senior apartments -- Just kept going right past all the deluxe apartments until I could narrow it down to ordinary apts. This town has good elder services and I think that's a good feature to look for when you're on your own.
Just a data point. I checked the independent/assisted living place where my mother stayed for a couple of years. This is in a small Iowa town.
The cheapest option is $1925/mo. That gets a 600 s.f apartment, two meals per day, complementary transports to appointments, and some minimal help with housekeeping.
There are four apartment floor plans, and four levels of help, so there’s 16 different combinations. The most expensive option runs $4303/mo, which includes up to 60 hours of help per month, plus the meals, transports, and an 840 s.f. 2-bedroom apartment.

Most people I know were able to drive, grocery shop, cook and take care of themselves until they died somewhere between 80-95. This was before delivery was available and if they couldn’t drive they took a cab to the store or got a ride. Most people age better than what society leads us to believe.
