New Jersey's tourism industry is expected to generate nearly $48 billion in revenue this year, which the Jersey Shore drives much of this industry.
As Memorial Day is considered the official kickoff of summer, which is a month before summer even starts, anyone who has been down the shore knows its too cold. You might get some hot days, and even cold days. The water is not even tolerable for the normal person until after July 4th weekend. The Jersey Shore is dead until after July 4th weekend.
The month of August and September are the best months at the beach, best water temperatures, some of the best sun through the last week of September.
Unfortunately, the start of school in the state has been arbitrarily linked to Labor Day, which was only randomly chosen on a date by the Federal Government that seemed to be about halfway between July 4th and Thanksgiving.
After school starts, the tourism industry just crashes and many hotels, restaurants, shops and attractions just close shop. Its quite sad because these are the best weeks of summer that are to be enjoyed. The locals love this time, because people leave and they can enjoy the beaches without the crowds.
For the state to maximize tax revenue, and for families to enjoy the weather, schools should not start until maybe the third week of September which by definition is still summer.
Would you support shifting the school year to keep the shore open longer?

Hell no. You ignore that would push schools to stay open longer into June and maybe July . No and to add many business are still open in September and October and even into November so again move on.
I don't see the problem with it. When I went to school many years ago we started after Labor Day and went up to around the beginning of Summer with a few vacation weeks through the year. Down here in NC my grandkids go to school in the Summer but have frequent breaks during the year.
An few days up to a week wouldn't be awful, would be nice to be able to travel to wherever the week after labor day as it's less insane than August. NYC has a really late schedule this year, they start the Thursday after Labor Day and don't finish until June 26. Matching that schedule would be fine. More than a few extra days however and you get out of sync with the rest of the northeast and messes up schedules for camps, etc. I know our camp already has a weird schedule next year because of the NYC calendar.
However the one thing you are forgetting is that a huge portion of the staff at the shore is college kids. Even if NJ schools moved later, colleges probably would not (and even if NJ colleges did, that's a small portion). I know there is a huge staffing issue at the shore by late August (for example less than half of the lifeguard stations in LBI have lifeguards today).

You're right about all of that but still there is nothing stopping any business from staying open into October or November down the shore. Changing the school year for it is ridiculous.
I’d be open to extending the summer break further into September but not extending the school year further into June/July. Maybe add 15-30 mins to each school day to make up for the time?

Best run that by the NJEA since they run everything right?

Not the way it works. BOEd's have guidelines and requirements of number of school days not mins and if it's public school then there are Unions you have to deal with. Add in sports activities with bus schedules. The OP was more concerned about money generated not the cause and effect of the action.
