Seared chicken breast, mushrooms, marsala wine sauce on veggie rice. Side of sliced tomatoes.

I got up very very very early today so had dinner at 11:23 a.m. -- the good news is that it was delicious!

Hadn't had pork tenderloin in a while so cooked some medallions on the stovetop -- took about 4 minutes to cook. I knew I wanted to have it with avocado so I checked the one I had in the fridge ...



Oh my gosh, it was PERFECT!! That virtually never happens, LOL!

I'd already cooked the veggies so they were just waiting for the pork. I'd also mixed together some apricot preserves with stone-ground mustard for the sauce -- SO simple and SO good!



Everything was delicious. I have 3/4 of the pork tenderloin left so will probably half-cook more medallions, then freeze them, as I doubt that I can finish them this week.

Hope everyone has had a great weekend! We were supposed to get a storm today but so far pretty much nothing. Let's see how much I have to shovel at 6:30 tomorrow morning!

Back home after a week in Florida. We went out to eat every day - all seafood except the Italian because we can't good Italian here. Tonight I'm making a steak, baked potato and probably broccoli.

Sugo with beef, onions, mushrooms per request. Fettucchini, rabbit food

Flax crackers with lots of heat, cheddar ball, Merlot, CD for starters.
