Just the basics as I'm the only one cooking for elderly mom and special needs brother...ham, scalloped potatoes, veggies, and just got a blueberry pie at store (forgot the whipped cream though)...along with some champagne for the holiday toast.

That's a very nice dinner. I don't like whipped cream on blueberry pie. The champagne is a nice touch.

When Daughter dropped by with the ham today she told me there is a shortage of eggs, among many other things, around here.

I spent halt the day trying to find gingersnap cookies. None in any of the local groceries or the first couple bakeries I called. Finally I called a baker friend and asked him to make me a dozen.

It sounds like fun to have visitors for two different sides of the world for your meal.

Thanks...still have a little whipped cream in can...elderly mom likes it so will make sure to have it along with champagne toast. Just realized ham not spiral sliced so will carve it when done.

No company or kiddies this year, so we will have a nice little med rare prime rib, roasted spuds, asparagus, and Dutch apple pie with ice cream. I wanted lamb, but couldn’t find a small enough roast.

Easter we go to relatives and bring a dish or two.

Today I'm making (first time) Mary Berry's Frasier strawberry cake because it's gorgeous and I love everything about it, viewing, eating lol. Husband making fancy mac and cheese with feta and big noodles. Main event will be ham.
I've been on a 5 day diet consisting of "no desserts-no wine" which is the only diet I can handle.

Took me awhile but I finally have a dinner plan for Easter. We are having lamb racks of rib. My husband makes them with a ras el hanout rub and finishes them with a red wine/balsamic vinegar reduction. Also having roasted red potatoes and tabbouleh. There will be a fresh baguette to round dinner out. Tres leches cake and an oreo ice cream cake for dessert.

Just us this year, both kids are away with their families as it is the middle of our two week school holidays.
Thought we would have roast lamb. But we are celebrating sunny weather here after our wettest March on record. So went for a drive and beach walk followed by a Thai lunch.

So it is toasted chicken sandwiches for dinner. With fruit mince tarts that I have saved from Christmas.
