THE FOLLOWING NEED CLEANING AND MAINTAINING: EXTERIOR OF COOKING EQUIPMENT, INTERIOR BOTTOM OF FRYERS TO REMOVE GREASE, AREA UNDER GRILL, VENTS IN HOODED AREA OVER EQUIPMENT, SHELVES INSIDE WALK-IN COOLER. CLEAN INTERIOR AND EXTERIOR OF REACH-IN COOLERS IN FRONT PREP AREA.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN AND MAINTAIN FLOORS AND FLOOR DRAINS. CLEAN IN WALK-IN UNITS, UNDER, AROUND AND BEHIND KITCHEN AND COOKING EQUIPMENT.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN WALLS AROUND AND BEHIND COOKING EQUIPMENT AND INSIDE WALK-IN COOLERS. REMOVE DUST FROM ALL CEILING VENTS WHERE NEEDED INCLUDING VENTILATION FAN IN WASHROOM. REPLACE CEILING TILE WHERE NEEDED.

REPLACE MISSING COVER FOR BACK OF TOILET BOWL IN WASHROOM.
