Facilities not maintaining proper temperature while storing potentially hazardous foods. Found two coolers in deli area at improper temperature. Salad cooler at 46.2 F to 53.7 F and Sausage cooler at 52.1 F. Instructed that coolers must manitain 40 F or below. 'Held for Inspection' tag placed on coolers. Critical citation issued 7-38-005(A).
Potentially hazardous foods does not meetr temperature requirement during storage, preparation, display and service. Found approximately 36-6oz yogurt at the bottom of sausage cooler 52.3 F. Salad cooler found Tuna Salad approximately 8lbs at 61.5F, pork meat patties at 47.3 F. Instructed manager that potentially hazardous foods must maintain 40 F or below. Manager voluntarily denatured and discarded. Value $100. Critical citation issued 7-38-005(A).
