Vent fan in cooler room above walk in cooler has dust buildup. Must keep clean to prevent buildup of bacteria and contamination.

Observed mop bunched up in mop bucket. Must allow mop head to air dry when not in immediate use to prevent buildup of bacteria and contamination.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Items that were previously frozen and brought out to thaw were not re-dated. Must re-date items that were frozen previously to indicate new dates. First day of thaw counts as day one. Corrected at time of inspection
- Cleanability of floors, walls, and ceilings
Flooring in kitchen and dry storage area are showing signs of wear, and are no longer cleanable. Must repair or replace floor to provide a smooth, easily cleanable, and nonabsorbent surface.
- In-use utensils, between-use storage
1)Observed ice scoop in ice bin. If storing scoop in bin then the handle must not be allowed to touch the ice. 2) The following areas have become soiled and must be cleaned: line cooler, 3 door freezer, and bar webbing on left side of 3 hole bar sink and tallboy cooler.
- Outer openings are protected
Back door has light showing around outer edges. Must seal back door completely to prevent entry of pests.
- Roasts held at a temperature of 130°F or above
Parm cheese was observed at room temp. Per manufacturer requirements parm cheese must be kept in temp control @ 41*F or below. Discarded at time of inspection.

1) Observed cardboard reused to hold items. May not reuse cardboard for any other purpose than original product. 2) Walk in cooler room has food debris and soil on floor. Must keep clean to prevent buildup of bacteria and contamination.

Did not have handwashing signs posted in RR. Must post a handwashing sign at all handsinks used by food service employees.
