Observation:Has ice buildup on interior of small chest freezer and in front open topped cooler, clean both more frequently to prevent accumulation of ice on food packages.

Observation:Has home style Frigidare cooler that is holding whipped cream and yogurt base, must provide a commercial grade cooler for this purpose.

Observation:Leak at the culinary sink faucet, repair.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation:Can of whipped cream is not date marked as to when opened, must date and use within 7 days or discard. Discarded today.

Observation:Many nozzles have buildup of flavor on exterior, must be removed nightly and cleaned and sanitized, currently doing every few days.

Observation:Has wet cloth on counter, must store in sanitizer solution, corrected on site.
- Sanitization methods - hot water, chemical
Observation:No chlorine sanitizer detected in spray bottle of sanititzer, remade bottle and now at 100 ppm.

Observation:Current PIC's do not recall signing an employee reporting agreement for illnesses. Must have all staff sign, given example again today.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation:Can of whipped cream at 55 degrees F, kept in open topped cooler, must store at 41 degrees or less, moved to refrigertor now. Current one discarded that was out of temp.

Observation:1)Missing some tiles to be level under three compartment sink area, repair to make smooth and cleanable surface. 2)Two exposed wood covered areas in ceiling storage near front of building, cover to make smooth surface and paint or seal to make cleanable surface. 3)Caulk the three compartment sink to the wall. 4)Trap on the three compartment sink installed very close to the floor/grease trap, must move off the floor, to aid cleaning, about 2 inches minimum.
- Material characteristics of non-food contact surfaces
Observation:Seal the underneath surface of the new countertops, all bare wood needs to be sealed with at least two coats of light colored paint or varnish.
- Separation from food, equipment, utensils, linens, and single service
Observation:Store chemical cleaners away from the three compartment sink area.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation:Mechanical ventilation is not working in RR, needs repaired.
