Person in charge stated the pizza was pulled from the oven at approximately noon time. Discussed "Time as a public health control". Observed non- PHF'S sauces, BBQ, hot sauce, teriyaki sauce, that contain bits of cooked chicken being hot held in table top style steam table at 118 Degrees F. Observed cook take cooked chicken wings from fryer and drop them into mild hot sauce container in the steam table. Due to bits of chicken remaining in sauce, the sauce must be maintained at 135 Degrees F or higher. Recommended rapidly reheating sauce to 165 Degrees F then maintaining at 135 Degrees F or higher. Person in charge stated put sauce into pan to be reheated to 165 Degrees F. **Warning**
