Observed sauerkraut held at cold hold prep unit at 54°F and shredded mozzarella cheese at 56°F. Observed items moved to other cooler. Operator believes prep unit is iced up and needs to thaw.
- Intermediate - Food manager certification expired. Observed on routine inspection 9/24/13, SerSafe certificates for Richard and Lorraine Metacarpa expired on 7/2/13 (test date 7/2/08). Citation is being addressed through admin. complaint submitted 2/4/14. Operator informed me that he is signed up to take food manager exam on Wednesday, February 26, 2014.

This violation must be corrected by Monday, November 25, 2013. **Warning** Callback 12/9/13: Observed food manager certificates not renewed. Operator states he is in the process of trying to retest. Time extension of 30 days granted. This violation must be corrected by January 9, 2013. Open callback 2/4/14: Observed food manager certificate not renewed and violation not complied. Observed owner's advised inspector that times are tough and money is tight and they are waiting on a payment expected this week through their attorney. Advised operator to complete food manager certification and fax certificate to D6 office as proof when completed.

Observed the following foods at cold hold prep unit: shredded lettuce 52, sliced tomatoes 52, sauerkraut 53, sliced roast beef 50, sliced turkey 56, shredded mozzarella 53. Owner turned down temp on unit and by end of inspection the following temperatures were observed: shredded mozzarella 51 sliced turkey 52 and all other temperatures were the same. **Corrected On-Site** **Warning**
- Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. Observed ambient air temp of 44 by establishment''s thermometer in sandwich prep station. When inspector''s thermometer was left in the below interior of the sandwich station, ambient air was observed at 50. **Warning**
