Inside the walk in storage refrigeration uncovered raw goods are stored above and adjacent to salads and vegetables intended for placement on salad bar with no further processing and or cook cycle. Certified Food Protection Manager on duty must educate all staff regarding this issue and monitor to assure complaince.
