My favorite to shoot is my S&W Hand ejector 2nd edition from 1915. It has British hallmarks on, due to it being used in WWI. It's still in the original Webley .455 caliber which is pretty expensive these days, but the gun is so heavy, and the lead so slow that it's still probably the most naturally accurate gun I've ever shot.
Wouldn't fancy facing German machineguns in no mans land with it, but on the range, it's unsurpassed. Always gets a few admiring looks from the other shooters too.
The Webley 455 is a lot cheaper to shoot if you handload. It thrives on cast bullets, if you get set up to cast your own they are nearly free. Of course the equipment is not free.
S&W 686-3. The very first gun I own so it has a special place in my heart. The L frame soaks up the recoils nicely. The adjustable sight allowed me to zero in at 25 yds. It's so accurate to the point of boring.
Springfield 1911 Mil-Spec. It's humble appearance is deceiving. I put a Pachmyer grip on it and it too soaks up the recoil well, making it pleasant to shoot. Between the 1911 and the S&W 686, I've become a "trigger-snob" spoiled by the single-action trigger smoothiness.
CZ Collection. What can you say about the CZ-75 and its variants that has not be said before? The CZ97 is the softest shooting 45 acp I've shot. The moment I held a CZ-75 Compact I know I wanted it. It fits my hand like a glove.
Sig-Sauer P-Series. Just like the CZ, the Sig collection is a timeless classics. The P-220 is the most accurate 45 acp I've shot. When I went into the LGS wanting to get a Walther PPK, the salesman convinced me to get a Sig P-230 instead, I have not regret it since.
I wouldn't care for a .38spcl for self defense but lightweight .357mag ups the ante a bit. A 3" S&W 686+ in .357mag gives a shooter a very potent round and 7 rounds. Essentially equal to most single stacks. Theoretically if you go thru 7 rds then you're in a pickle anyway.
I carry a 4" 686 no-dash around the farm here with a few of the CCI blue capped shotshells for snakes and such. My speed loaders are loaded with 125gr JHP and I really like 110gr JHP for recoil reasons. Obviously I'm a huge fan of wheelguns.
I only own 2 semi-auto pistols, both 45acp, and I like them both. The HK45 that has a10 round capacity only but is utterly dependable, very accurate, very easy to shoot and very big (not really concealable). But i do love it for the qualities it has except largeness.
I have a much older Canadian manufacture Para Ordinance P-14 kit gun that is big also but shoots well and has some upgrades. Has a Colt upper and a P-14 lower. Bomar sights help. Bought from a neighbor who had used it for IDPA competition so it has had some rounds through it. Don't like it as well as the HK though but is dependable if you don't limp wrist it.
My best, or favorite pistols are the ones that are dependable, accurate, and comfortable.
I've had my Colt Series 80 Govt Model since 1989. It's never failed me. It's the only gun I've ever drawn on a city street. Thankfully I didn't have to fire. I'm also a CZ fan, I have a 75BD and a P-01.

I recently bought my first CZ on a whim - this 75 Compact is very nice in fit & finish and was a bargain (for the current market). Haven’t taken it out to shoot yet.

Love the CZ-75 Compact. I read that it can also take the CZ-75 16 round magazine.
