Critical: PHF/TCS, COLD HOLDING Observation: Brats, hot dogs and raw hamburgers in the bottom of the True 2 door cooler are cold held at 44-45°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. All food in the bottom of the cooler was moved to other coolers during the inspection. Correct By: 27-May-2015

Critical: PLUMBING - APPROVED SYSTEM Observation: The indirect waste plumbing exiting the basement ice machine box (condensate and storage) must terminate above waste plumbing with an air-gap. In addition, an ice storage box at the basement bar requires an air-gap.
Correction: Design, construct, install, and maintain the plumbing system to conform to the State Uniform Plumbing Code ch. SPS 382.
IN-USE UTENSILS, BETWEEN USE STORAGE Observation: Ice scoups at the bar were not stored with the handle upward. Store ice scoup in the ice product with the handle projected vertically upward.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED Observation: There are table supports inside the kitchen that are constructed of wood. If the wood is to remain it must be encapsulated with a washable covering material or painted with a high-gloss washable paint.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
