Observation: Lights located in the walk in cooler are not shatter resistant.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.

Correction: Provide handwashing signage at all handwashing sinks used by food employees. Signs were provided.

Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Corrected during inspection. Foods were reorganized.

Observation: Raw hamburger in True 2-door cooler is cold held at 45, 47°F. Mashed potatoes in True 2-door cooler are cold held at 44 degrees F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Corrected during inspection. Foods were voluntarily discarded.

Observation: Bleach is not being used according to manufacturer’s use directions. Chlorine concentration in wiping cloth bucket found to be 10 ppm.
Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Corrected during inspeciton. New sanitizer solution was prepared.
- FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE
Observation: No thermometer is present for monitoring temperatures in thin mass foods.
Correction: Provide a thermometer capable of taking temperatures in thin mass food items. Correct By: 15-May-2014

Observation: A chlorine test kit is not available for checking sanitizer (bleach and LTS 3000) concentrations.

Observation: Flour, sugar, and salt are stored in unlabeled containers/drawers.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
