Observation: The Flour Sack is stored on the floor in the store room.
Correction: Store all food items 6 inches above the floor.

Observation: There is a bag of buns(italian Beef) that had some mold on it.
Correction: Discard the buns and change area of storage. Buns were discarded.

Observation: Significant food preparation is occurring without the use of a food preparation sink. Repair the faucets for the food prep seink.
Correction: A food preparation sink shall be provided for significant food preparation.

Observation: Portioned Cole Slaw and Dressings in the Beverage Aire Prep cooler are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.Note: Per the owner these items are made on Thu and used up on Fri and what is left over is discarded. The owner date marked these items during the inspection.
- OPEN DRINK CONTAINER (corrected on site)
Observation: Drinking cup without cover was observed in food preparation area.
Correction: Provide approved beverage container in food preparation area. The cup was removed from the food prep area.
- EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
Observation: The Kelvinator and Kenmore Reachin coolers are not ANSI certified or approved by the department.
Correction: Unapproved equipment shall be removed from food service. Do not store TCS/PHF in these units.
- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: The bottom shelf areas of the 3 door Prep cooler is soiled.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The Fryer is not cleaned on a frequent basis. The floor below the fryer has built up grease.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
