  • Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site)
    Observation: Employee observed handling ready-to-eat hamburger and toast with bare hand. Operator answered phone with gloved hand, removed glove, but did not wash hands or put on a new glove or separate hands from read-to-eat food with utensil.
    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. Operator subsequently used gloves and utensils for handling ready-to-eat food.
  • PROPER COOLING METHODS - CRITERIA
    Observation: Improper cooling methods are observed for tomatoes in large pot in walk-in cooler. Food is about six inches deep and pot is tightly covered with foil. Tomatoes are at 45F. Operator stated that they were cooked last night for sauce.
    Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. Discard cooked food which has not cooled from 135F to 41F within 6 hours or 135F to 70F within 2 hours.
  • CONSUMER ADVISORY
    Observation: There are no asterisks next to billboard menu items such as hamburgers and fried eggs to disclose and remind the consumer about the consumer advisory which is posted next to the menu.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition which includes asterisks next to each applicable menu item and the advisory. Correct By: 04-Sep-2015

    Observation: Open can of soda was observed in food storage area over other cans of soda.

    Observation: Freezers are not equipped with an integral or permanently affixed temperature measuring device.
    Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device. Thermometers placed in a couple of freezers during inspection. Provide air temperature thermometers in all freezers. Correct By: 04-Sep-2015
  • UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
    Observation: Dish racks are stored on the floor in the kitchen.
    Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and at least six inches off the floor. Correct By: 22-Aug-2015

Any exposed, unused settings shall be removed when the consumer is seated or unused utensils shall be removed after the consumer is seated and be properly cleaned and sanitized.
