Discard potentially hazardous foods held above 41F for more than 4 hours or for an unknown amount of time. Contact inspector by phone or email with corrective action within 24 hours.

Observation: There is no detectable level of chlorine sanitizer in the C-2 warewashing machine. Sanitizer bucket is empty.
Correction: Operator added sanitizer to bucket, and machine is now consistently providing 50 ppm chlorine sanitizer to the utensils. Recommended operator use chlorine strips on hand to test machine at least weekly if not daily.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Damp wiping cloths used for wiping counters stored on spray bottle and on prep counters.
