EQUIPMENT AND UTENSILS - PROPER ADJUSTMENT Observation: The seal on the right door of the True 2 door cooler is torn. There is a small rip in the seal of the left door of the same cooler.
Correction: Repair/replace the door seals so they are intact, tight, and properly adjusted.
NON-FOOD CONTACT SURFACES - CLEAN Observation: The salamander, 4 burner stove, fryers and the wall next to the prep cooler are soiled with grease and food debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
SURFACE CHARACTERISTICS - INDOOR AREAS Observation: The floor in the bar is unfinished and some of the planks are separating causing gaps.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
