Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition. Currently the owner said that they do not serve undercook or uncooked items. They will add the consumer advisory statement with asterix on the items that can be served rare for the next printing of the menu.

Observation: Soap not available at the bar employee handwashing sink.
Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.

Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.

Observation: The walk in cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.Place the thermometer in the warmest part of the cooler.

Observation: True pizza prep cooler is not maintaining temperatures below 41 Degree F
Correction: Repair equipment to good condition or remove from premise..( All TCS items recently stocked were moved. The owner will not use the unit and once repaired, he will email us an invoice to show us the repair.

- Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
Observation: Employee observed handling tortillas with bare hands.
Correction: Bare hand contact with cooked and ready-to-eat foods is prohibited. Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
- Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED (corrected on site)
Observation: Bleach in wiping cloth buckets measured to be 200 ppm and is not being used according to manufacturer’s use directions.
Correction: Maintain chlorine concentration in wiping cloth buckets at 50-100 ppm. Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Operator changed out wiping cloth bucket.

Observation: No handwashing signage provided at handwashing compartment of 4-compartment sink.
Correction: Provide handwashing signage at all handwashing sinks used by food employees. Use the handwashing compartment for handwashing only.
