Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.Place the thermometer in the warmest part of the cooler.

Correction: Repair equipment to good condition or remove from premise..( All TCS items recently stocked were moved. The owner will not use the unit and once repaired, he will email us an invoice to show us the repair.

Correction: Bare hand contact with cooked and ready-to-eat foods is prohibited. Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED (corrected on site) Observation: Bleach in wiping cloth buckets measured to be 200 ppm and is not being used according to manufacturer’s use directions.
Correction: Maintain chlorine concentration in wiping cloth buckets at 50-100 ppm. Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Operator changed out wiping cloth bucket.
