Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site) Observation: Employee observed handling hamburger bun with bare hands. Discussed proper use of gloves and untensils instead of bare hands. Employee corrected on site.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
FOOD TEMPERATURE MEASURING DEVICES - PROVIDED Observation: No thermometer is present for monitoring temperatures in foods in walk-in cooler.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.
EQUIPMENT AND UTENSILS - GOOD REPAIR AND CALIBRATION - TEMPERATURE AND PRESSURE MEASURING DEVICES Observation: Air temperature of walk-in cooler at 44 degrees. Operator contacted service repair to correct.
Correction: Walk-in cooler shall be maintained in good repair and calibrated to maintain 41 degrees and lower at all times. Operator removed all potentially hazardous foods to maintain lower than 41 degrees at all times.
