    Observation: There was not a proper air-gap under the food sink or the ice machine.
    Correction: Provide an air gap on water supply side to protect water supply. Cut the pipes shorter so that you have a 1-2 inch gap.

    Observation: The advisory was written but the items it applies to were not indicated.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition and indicate which items the advisory applies to (i.e. steaks, burgers).
  • EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY
    Observation: The surfaces of the waitress station table are wearing.
    Correction: Reseal the black wooden shelf unit.
  • FOOD CONTACT SURFACES - SOILED
    Observation: The ice machine had a build-up on the interior of it.
    Correction: Maintain food contact surfaces in a clean condition. Clean the ice machine.

    Observation: The surfaces under the grills had a build-up of grease.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment. Clean under the equipment located beneath the hood.
  • REPAIRING - PREMISES, STRUCTURES, ATTACHMENTS, AND FIXTURES - METHODS
    Observation: The ceilings in both walk-in coolers are deteriorating.
    Correction: Maintain the physical facilities so they are in good repair at all times. Replace the ceilings in both coolers. (kitchen and beer coolers)

    Observation: The floor under the equipment and along the edges of the kitchen floor had a build-up of grease and debris.
    Correction: Clean the floors thoroughly in the kitchen.

    Observation: Homemade salad dressings and containers of milk were not datemarked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • CONSUMER ADVISORY
    Observation: Consumer advisory was available but the items it applies to were not designated on the menu.
    Correction: Designate which food items the consumer advisory applies to.
  • FOOD TEMPERATURE MEASURING DEVICES - PROVIDED
    Observation: No digital thermometer is present for monitoring temperatures in foods.
    Correction: Provide a digital thermometer that is capable of taking temperatures in food.

    Observation: The beer cooler is not maintained in good repair.
    Correction: Repair beer walk-in cooler to good condition.
  • UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - SELF DRAINING POSITION
    Observation: Pitchers were stored on linen towels.
    Correction: Clean equiment and utensils shall be stored in a self-draining position to allow for air drying and covered or inverted. Do not store clean utensils on linen towels-they are not sanitized.
  • SINGLE-USE AND SINGLE SERVICE ARTICLES - PROHIBITIONS
    Observation: All single service items were stored on the garage.
    Correction: Store single-service or single-use articles, clean equipment and utensils and laundered linens in areas that are not subject to contamination. Remove unnecessary items and store all single service items off the floor at least 6 inches.
  • MAINTAINING PREMISES, UNNECESSARY ITEMS AND LITTER
    Observation: The basement has a large amount of debis located throughout the different rooms.
    Correction: Items that are unnecessary to the operation of the food establishment shall be removed from the premise. Unnecessary items increase fire hazards.
