Observation: Cheeses in the piaza prep cooler are cold held at 42°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. The cheese was moved to a colder area of the cooler and the thermostat was adjusted.

Observation: Raw hamburger is being improperly thawed by placing it in a utensil sink.
Correction: Adjust procedures or methods to properly thaw foods such as by placing in running water or in a cooler. The burger was placed in a container with running water.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The paint on the floor in the kitchen and behind the bar missing and chipping in many areas. Epoxy paint was applied about a year ago but is failing.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
