Critical: PHF/TCS, COLD HOLDING Observation: The following items found cold held greater than 41°F in the sandwich expo cooler bottom
Correction: chicken salad at 51, pesto sauce at 49 and tziki sauce at 55. Bagged baby spinach found in a cooler with an ambient of 52. Ambient in expo cooler found at 44 by the end of the inspection. Spinach at 41 internal All bulk TCS-PHF foods were relocated to a different cooler.
Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site) Observation: The dish machine sanitizer is not being used according to EPA registered label use instructions and was at 0 PPM. Note: bulk chemical was empty and changed out. The line was primed and found properly sanitizing at 50-100ppm chlorine. Please continue to monitor dishmachine regularly.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Correct By: 12-Nov-2015
TOXIC SUBSTANCES - SANITIZER CRITERIA Observation: Ecolab Proforce disinfectant cleaner was being used as a sanitizer used in the food establishment. There are no mixing instructions for food contact surfaces and is not approved. Note: PIC ordered premixed sanitizer during inspection. Concentration reduced to <200ppm on one bottle for use in the kitchen.
Correction: Sanitizer shall meet the requirements under 40 CFR 180.940. Correct By: 13-Nov-2015

Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
Critical: COOLING (corrected on site) Observation: Macaroni and cheese is is not cooling properly and is at 44 °F after 14 hours. Cool all foods uncovered in a glass door refrigerator.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours.
