Observation: There are ready-to-eat such as peppers, lemons and cooked chicken stored under raw beef in the Turbo Air cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
- EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
Observation: Small Waring fryer is not ANSI certified or approved by the department.
Correction: Unapproved equipment shall be removed from food service.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The Sear Cold Spot Freezer in basement is not cleaned on a frequent basis with mold present inside of unit.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
Observation: The 4 comp bar sink faucet is not maintained in good repair. There is a towel on faucet to help with the leaking faucet.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Replace the tiles that are missing under the prep table in the lower area of the kitchen.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The wood wall at the mens bathroom shows signs of water damage. Reseal the wood on wall at sink.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
- FLOOR AND WALL JUNCTURES, COVED, AND ENCLOSED OR SEALED
Observation: Floor and wall juncture in the upper prep area of the kitchen is not coved with molding pulled away from the walls.
Correction: Provide base coving.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: Clean under the prep tables at the upper area of the kitchen of food debris.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
