Observation: The canadian bacon and lettuce have exceeded their date marks. According to owner, the establishment was closed yesterday and these items would have been pulled from the cooler today.
Correction: Discard Ready-to-eat potentially hazardous (TCS) foods requiring date marking that have exceeded their discard date or are not date marked. These food items were voluntarily discarded

Observation: NSF prep table is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- EQUIPMENT AND UTENSILS - FIXED , SPACING OR SEALING - INSTALLATION
Observation: The 3-comp and handwashing sinks are fixed in place and not easily movable to allow for cleaning.
Correction: Provide a bead of caulk between equipment and wall/backsplash. Equipment shall be spaced from wall and other equipment to allow cleaning on all sides, sealed to adjoining equipment walls or elevated on legs to allow for easy cleaning.
- FOOD CONTACT SURFACES - NON TCS/PHF -FREQUENCY
Observation: The dough roller is soiled - last used this past Sunday
Correction: Clean in-use utensils after using or a minimum of every 4-hours.
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: Clean utensils are improperly stored on cloth towels in the kitchen - cloth is not smooth or non-absorbent.
Correction: Clean equipment and utensils shall be stored on a smooth, durable, non-absorbent, and easily cleanable surface.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The following areas have chipping or peeling paint, or exposed wood - not easily cleanable: piping above 3-comp sink, inside of half wall adjacent to handwash sink/wooden ledge on top of the half wall, and the wooden trim of entry-way to kitchen.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
