Observation: Sausages, raw eggs, coffee creamers were found at 61F, 50F, room temperature, respectively.
Correction: Maintain cold potentially hazardous foods at or below 41°F or see the item regarding using time as the control method. The operator stated these items were removed from proper refrigeration at about 7:30AM. The operator declared these items would be used by 11:30AM and the containers would not be re-used until they were washed, rinsed, and sanitized. Correct By: 24-Sep-2014
- TIME AS A PUBLIC HEALTH CONTROL - PLAN APPROVAL AND PROPER METHODS
Observation: Time is being used as a control method for food items including diced ham, sausages, raw scrambled eggs, raw shell eggs, and coffee creamer marked keep refrigerated. This restaurant does not have an approved written plan in place for using time as a control method.
Correction: If the restaurant continues to use time as the control method instead of proper refrigeration (<41F) a written plan must be prepared that states what foods apply, how the time will be tracked (foods cannot be out of proper refrigeration for more than four hours), and that the foods that have exceeded the four hour limit shall be discarded, and all equipment in contact with these foods shall be washed, rinsed, and sanitized at least every four hours. All employees must be trained on the plan. The plan must be approved by the inspector. See the information bulletin regarding using time as a control method for more information. Observation: The consumer advisory does not identify which menu items are served undercooked. The operator stated that eggs are cooked to the liking of the consumer. (the reminder that undercooked food is an increased health risk is on the menu),
Correction: The written consumer advisory must contain two parts
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloths stored in a bucket of water did not have a sanitizer residual when tested.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution like 100 ppm plain bleach and water solution (about one capful per gallon of water). Correct By: 24-Sep-2014

Observation: The dirty dishes side of the warewashing station is not sef-draining.

Observation: Lights located in the walk in cooler and freezer are not shatter resistant.
