Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Spinach and cream (46 F) in the saute cooler and the butter (46 F) in the grill cooler and the milk (46 F) is cold held above the allowed 41°F. Discussed that it may be because towels are stored in the drawer above and could be preventing the air from getting down to the lowest drawer. Monitor the drawers to determine the hot and cold spots within the cooler. Adjust or repair as needed to maintain the potentially hazardous foods at 41 F or below. The towels and potentially hazardous foods were removed from the coolers. Violation corrected during inspection.

Correction: Discontinue using the cloth towel as it does not meet the requirements for a food contact surface (smooth, non-absorbent, easily cleanable and durable).
EQUIPMENT AND UTENSILS - GOOD REPAIR (repeated violation) Observation: The walk-in meat cooler noted with ice accumulation between the cooler and the walk-in freezer and tile were missing. The executive chef explained that the walk-in cooler floor will be replaced to resolve the ice accumulation issue. Discussed replacing with a poured epoxy or the walk-in cooler floor panels. This is a repeat violation.
Correction: Repair equipment to good condition or remove from premise.

Correction: Discontinue using a towel in direct contact with foods as it is an absorbant material.
