Observation: Thermometer on outside of the chicken nugget freezer at grill area measuring ambient air is not accurate to ± [2 ]°F. The thermometer reads 42 degrees fahrenheit and the chicken nuggets in the freezer are frozen as observed.

Observation: The salads stored in the prep cooler below the sandwich table are not being held at 41 °F or below. A cherry tomato in one of the salads was temped and was found to be cold held at 52.2°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. All salads were discarded. Correct By: 03-Jan-2014
- PERSON IN CHARGE - DUTIES
Observation: Per employees, the Person in Charge (PIC) is not restricting ill employees from working with food in the facility.
Correction: The person in charge shall provide training to employees on employee health and hygiene and shall restrict employees from working with food while ill. Correct By: 03-Jan-2014
- FOOD CONTACT SURFACES - SOILED
Observation: The inside of the ice machine has a build-up of slime and mildew.
Correction: Clean and sanitize the ice machine. Maintain the cleanliness of the ice machine at all times. Correct By: 07-Jan-2014
- THERMOMETERS - FUNCTIONALITY - WARMEST PART OF UNIT
Observation: Thermometers are missing in the prep cooler under the sandwich prep table and the drive-thru reach-in cooler.
Correction: Place and maintain working thermometers in all coolers. Correct By: 10-Jan-2014
- EQUIPMENT AND UTENSILS - GOOD REPAIR
Observation: The reach-in prep cooler under the sandwich prep table has broken gaskets on both doors. Because of the broken gaskets, the cooler is unable to hold proper cold holding temperatures. During the inspection, the ambient air temperature of the cooler was found to be at 68 degrees.
Correction: Repair cooler by replacing gaskets. If gaskets are not able to be repaired, remove the cooler from the premises. Do not use the cooler to hold potentially hazardous foods until it is fixed and can maintain cold temperatures of 41 degrees or below. Correct By: 10-Jan-2014
- HANDWASHING SIGNAGE
Observation: There is no handwashing signage located at the handwashing sink in the kitchen or in the employee restroom.
Correction: Provide and maintain handwashing signage at all handwashing sinks used by food employees. 2 handwashing signs were given to operator during inspection. Correct By: 03-Jan-2014
