Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: The salads stored in the prep cooler below the sandwich table are not being held at 41 °F or below. A cherry tomato in one of the salads was temped and was found to be cold held at 52.2°F.

EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: The reach-in prep cooler under the sandwich prep table has broken gaskets on both doors. Because of the broken gaskets, the cooler is unable to hold proper cold holding temperatures. During the inspection, the ambient air temperature of the cooler was found to be at 68 degrees.
Correction: Repair cooler by replacing gaskets. If gaskets are not able to be repaired, remove the cooler from the premises. Do not use the cooler to hold potentially hazardous foods until it is fixed and can maintain cold temperatures of 41 degrees or below. Correct By: 10-Jan-2014
