    Observation: There are ready-to-eat foods (canadian bacon, cooked folded eggs) stored under open cartons of raw shelled eggs in 2 coolers.
    Correction: Reorganize storage so that ready-to-eat foods are stored above raw shelled eggs.
  • Critical: PHF/TCS, COLD HOLDING
    Observation: McCafe products in right end cooler are cold held at 50°F.
    Correction: Maintain cold potentially hazardous foods at or below 41°F. Product was removed from cooler. Do not store any perishable product here until cooler is repaired. Call when cooler is maintaining proper temperature.
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided at toilet room handwashing sinks.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.

    Observation: Scoop for steak burrito mix was improperly stored. Scoop was laying in mix.
    Correction: Store in-use utensils in the food item with handle extended, or on a clean surface.
  • WIPING CLOTHS - USE LIMITATION - SANITIZING SOLUTIONS
    Observation: Wiping cloth solutions in buckets did not show any sanitizer present. I am told that buckets are changed every 4 hours.
    Correction: Maintain wiping cloth sanitizer solution clean and free from visible debris. Concentration of sanitizer must be 100 pppm. Change water more frequently as needed.
  • EQUIPMENT AND UTENSILS - GOOD REPAIR
    Observation: On line - plastic holder, for ketchup and mustard dispensers, is cracked.
    Correction: Replace this piece of equipment to make smooth and easily cleanable.
