    Observation: Employee was observed eating in the kitchen area.
    Correction: Provide employee break room or designate an area away from food preparation for eating.
  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: Large cleaver was improperly stored between cooking equipment.
    Correction: Store in-use utensils on a clean surface.
  • EQUIPMENT AND UTENSILS - GOOD REPAIR
    Observation: Caulk between equipment in steam table area is not maintained in good repair.
    Correction: Remove old caulk, clean and sanitize area, then recaulk to make smooth and easily cleanable.
  • INTENSITY - LIGHTING
    Observation: The light intensity in the dishwashing area is not adequate. Several light tubes in ceiling fixtures are not working.
    Correction: Provide the correct lighting intensity in all work and storage areas.
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: The kitchen ceiling is soiled and dusty in some areas.
    Correction: Clean ceiling at a frequency necessary to keep it clean.

    Observation: Egg rolls in chest freezer on cooking line are cold held at 63°F (these were discarded).
    Vegetables in prep cooler were all 44 F. (cooler had not been opened yet for the day)

    Correction: Maintain cold potentially hazardous foods at or below 41°F.
    Prep cooler must be adjusted to maintain foods at 41 F or less. (Repairman to be called)
  • Critical: FOOD CONTACT SURFACES - FREQUENCY
    Observation: Dirty dishes and utensils are being left out at night.
    Correction: Clean and sanitize (in dishmachine) all dirty dishes and utensils before closing up at night.
  • ADEQUATE EQUIPMENT FOR TEMPERATURE CONTROL
    Observation: Chest freezer on cooking line is being used as a cooler for storage of food. Air temperature was 47 F. Foods were 63 F.
    Correction: All foods stored in this chest freezer were discarded. Provide a cooler that is designed for and of sufficient capacity to hold food at proper temperatures. This chest freezer may not be used as a cooler for food storage. If freezer can be repaired to operate as a freezer, it may be used.
  • PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
    Observation: Foods in the coolers were uncovered.
    Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination.
  • FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
    Observation: Back storage room is unorganized. Tools and equipment is stored with food products.
    Correction: Clean and organize storage room. Keep all tools and cleaning products stored on lowest shelves, below food products.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: Non-food contact surfaces of cooking equipment (especially aroun woks) are soiled with food residue.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment at the end of the night.
  • SINGLE-USE AND SINGLE SERVICE ARTICLES - ORIGINAL CONTAINER
    Observation: Carry-out paper bags are not properly protected. Soiled bags noted on storage shelf in kitchen.
    Correction: Store paper products in a protected area, such as inside a clean box to prevent contamination.
  • GARBAGE/REFUSE - COVERING RECEPTACLES
    Observation: Garbage bins in the kitchen are not covered and were left uncovered overnight.
    Correction: Garbage and trash containers must be covered, and the containers need to be emptied before leaving at night.
