Critical: CLEANING PROCEDURE Observation: Food employee noted to wash and dry hands, grab a pair of gloves, blow into the gloves to expand and then put gloves on hands. Blowing into the gloves contaminates the gloves and hands, requiring hands to be washed again and gloves to be discarded.

Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Sliced tomatoes in Digitraul 2 door reach-in cooler are cold held at 45.0°F and sliced tomatoes in the 2 door reach-through cooler are cold held at 47.1°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. All potentially hazardous food items were removed from both coolers and stored in the Beverage Air 2 door reach-in coolers. Correct By: 21-Jul-2015
Critical: TIME AS A PUBLIC HEALTH CONTROL - 4-HOURS (corrected on site) Observation: Cooked bacon stored on the counter under time as a public health control is improperly datemarked. At 9:30 am bacon was datemarked with a discard time of 3:04 pm, exceeding the 4 hour limit.
Correction: Employee stated the datemarking machine wasn't working properly. Employee put the correct discard time on the bacon. Until the datemarking machine is fixed, employees must date all food items correctly by another method. Correct By: 21-Jul-2015
HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE Observation: Hot water temperature at handwashing sink is at 75°F.
Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F. Correct By: 04-Aug-2015
USING A HANDWASHING SINK - ACCESSIBLE (corrected on site) Observation: Large garbage can observed to be stored in front of and blocking the handwashing sink during inspection, making handwashing sink inaccessible for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Garbage can was moved next to the sink during inspection. Correct By: 21-Jul-2015
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: The 2 door reach-through under counter cooler has a build-up of ice and is in need of defrosting. The cooler is not able to maintain proper temperatures.
The gaskets of the Digitraul 2 door reach-in cooler are not sealing properly. When one cooler door is closed quickly, the other door pops open and doesn't seal. This cooler is not maintaining proper temperatures.
Correction: All potentially hazardous food items have been removed from these coolers and relocated. Repair both coolers to working order so that they may hold proper temperature. Do not store potentially hazardous food items in either cooler until they are repaired. Manager called repair company. Correct By: 22-Jul-2015
