Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site) Observation: Employee observed handling frozen, raw beef patties with bare hands then touch ready to eat cheese and single-use utensils with bare hands without washing hands or using gloves or utensils as a barrier to cross-contamination.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. Contaminated burger wrap and hamburger were discarded during the inspection. Employee subsequently washed hands and used gloves as a barrier. Recommended that a utensil be designated for handling raw beef patties only.
Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Diced tomatoes are cold held at 55°F in food pan on counter next to pan of ice.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Tomatoes moved to 4-door cooler and rechecked at 56-59F. Tomatoes discarded. Remaining foods pushed deeper into ice and ice added.
FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION Observation: Food preparation sinks less than 18" from mop sink are exposed to potential contamination.;Provide shielding and/or separation between the mop sink and food preparation sink(s) to protect foods from contamination.
