Ensure staff are following manufacturer's directions on proper set up of sanitizer buckets. TIME AS A PUBLIC HEALTH CONTROL - 4-HOURS - NOT MARKED Observation: Sliced american cheese on chill line using time as a public health control for 4-hours is not properly marked or identified with a discard time. Correction: Food items shall be marked or otherwise identfied with a time that is 4-hours past the point in time when the food was removed from temperature control. Critical: PLUMBING - BACKFLOW PREVENTION - AIR GAP Observation: Air gap on ice bin near the drive thru window is not complete. Air gaps on ice machine and other ice bin are proper. Correction: Provide an air gap on water supply side to protect water supply. WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: Wiping cloth used for wiping counters stored out on counters and not in submerged in sanitizer solution. Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED Observation: Handwashing sink in the back of the kitchen is not non-hand operated. Knobs are handles for the faucet. Handwashing sink near the register do have paddles for handles but recommend larger paddles for easy shut off. Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.	10/01/2014	Pre-inspection
