    Observation: The following temperatures were recorded in the Bistro kitchen grill drawers (44° F ambient): cheese-44°F, hamburger-46 ° F. All food in drawers was moved to another cooler. Manager stated that cooler repair person will be called.

    Observation: Fruit flies noted throughout establishment. Floor drain in back concession area and service bar area noted in need of cleaning.
    Correction: Increase cleaning frequency and eliminate standing water. Remove all unnecessary items from this area to minimize harborage conditions for pests.

    Observation: The following temperatures were recorded in the sautee prep cooler (46° F ambient): cooked pasta-46°F, risotto 44° F, mozzarella cheese- 44°F, cooked onions 44° F. Cooler repair person was called during the inspection.

    Observation: BAR: Soap and paper towels not available at food employee handwashing sink.
    Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.

    Observation: Sheet pan was being used as a scoop for breading. Ice scoops were stored unprotected on top of the ice machine.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.

    Observation: The spinach dip in the grill cooler drawers (43F ambient) in the Bistro Kitchen measured 43F, 45F, 46F. The spinach dip was immediately discarded. Discontinue use of grill cooler drawers until they can maintain food at 41F or below.
    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
    Observation: The iodine in the bar glass dish machine measured 0ppm. The dish machine was also leaking and running at about 180F. The machine was serviced during the inspection. The iodine then measured 12-25ppm and the repair man lowered the machine's temperature.
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.
  • CONSUMER ADVISORY
    Observation: No consumer advisory provided on menu for burgers.
    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: The following noted in need of cleaning:
    -Zaffiro's industrial can opener and holster
    -Soda machines (around nozzles, etc.)
    -Food prep sink floor drains

    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
  • FLOORS, WALLS AND CEILINGS - CLEANABILITY
    Observation: The floor tile grout in the Bistro Kitchen is worn. Water is collecting in crevasses between the floor tiles.
    Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.

    Observation: Italian sausage (44F), Mixed greens (47F) and provolone cheese (44F) in Pizza prep cooler- Zaffiros with an ambient air temperature of 47F. Do not store any potentially hazardous food in the pizza prep cooler until cooler can maintain 41F or below.
    Correction: Maintain cold potentially hazardous foods at or below 41°F

    Observation: Ice scoop stored on top of bread rack in back of main kitchen. See below.

    Observation: Observed leak at faucet with diverter valve at Ice Cream Cafe. Repair.

    Observation: Observed missing ceiling tile in back room of Ice cream Cafe. Replace.

    Observation: Observed gap in "garage" door in back of main kitchen. Keep door close at all times to prevent entry of pests.
